Each dish at VELD begins with ingredients drawn from Spier’s own organic farm and trusted local producers. Chef Phil Carmichael and his team transform these elements into refined yet soulful expressions of South African cuisine, slow-cooked lamb from the Karoo, just-picked garden vegetables, wood-roasted line fish, and breads baked fresh each morning.
